What is Batasha?
Batasha is a sugar candy made by boiling sugar syrup to a high temperature and then whipping or aerating it to create a foamy texture, which is then dropped in small rounds to dry. When it hardens, it becomes crisp and white.
🧂 Ingredients
- Sugar – 1 cup
- Water – ½ cup
- A few drops of lemon juice (to prevent crystallization)
- (Optional) Cardamom powder or rose water for flavor
👩🍳 How to Make White Sugar Batasha
- Make sugar syrup:
Combine sugar and water in a pan. Heat until the sugar dissolves completely. - Boil to the right consistency:
Keep boiling until the syrup reaches the hard ball stage (~120–125°C / 248–257°F). You can test by dropping a little syrup in cold water — it should form a hard ball. - Whip or aerate:
Remove from heat and stir continuously with a spoon or whisk to incorporate air. The syrup will start turning opaque white as it thickens. - Shape the batasha:
Quickly drop spoonfuls onto a greased tray or marble surface before it hardens completely. Work fast — once it cools, it sets. - Cool and store:
Let the batashas cool completely, then store in an airtight container.
